Raspberry sponge


  • ¾ oz. gelatine
  • ½ pint cream
  • ½ pint milk
  • ¼ pint rasp. juice

Melt gelatine in milk and add alittle sugar. Cool a little, then add juice and cream and whisk. Add colouring if liked.


Apricot Sponge

Made same way as raspberry. When turned out stand whole apricots on edge round the bottom and steady with jelly squeezed through forcing bag.
