Pear Snow

Boil 2 ozs. of rice in 1 quart of milk for 2 or 3 hours so that it gets nice and creamy. Cool. Put a layer of rice in a wetted mould then a layer of sliced tinned pears, and repeat till rice is used up. heat the pear juice and add ½ oz. gelatine. Colour it slightly and leave to set. Turn out mould into glass dish. Chop the jelly roughly and place round bottom of mould.
