Meally Puddings and Brown Sauce

  • 1 teacup medium oatmeal
  • ½ teacup flour
  • 3 ozs. finely chopped suet
  • 1 finely chopped onion
  • ½ teaspoonful baking soda
  • ½ teaspoonful salt
  • ¼ teaspoonful pepper
  • cold water to mix

Mix dry ingredients and bind together with a little cold water till a nice smooth mixture. Flour hands and form into balls. Place them in the sauce and allow to simmer steadily for 1 hour. Cook slowly.


Brown Sauce

  • 1 oz. dripping or margarine
  • 1 tablespoonful flour
  • 1 small onion sliced
  • 2 breakfastcups water
  • pepper and salt
  • some slices of turnip and carrot

Melt fat and fry lightly with onion. Add flour. Mix well. and allow to brown slowly. Add water by degrees, cold at first. Season. Let come to boil and skim. Allow to simmer till vegs. are soft, about 1 hour.
