Darioles of Chicken and Ham

• 1 pint aspic jelly
• ½ lb. chicken and ham chopped
• Peas

Ham and egg horns

Roll thin slices of ham round long pieces of hard boiled egg in the shape of horns. Fasten each one with a stick. Fill in the top with chopped beetroot or chopped aspic jelly.

Pastry cases filled with chopped chicken, tongue, lamb, veal, or lamb and topped with peas, Russian salad, beetroot, tomato, etc. mint jelly

Cheese Straws

• 2 oxs. butter
• 2½ ozs. flour
• 2 ozs. Parmesan Cheese
• 1 oz. Cheddar Cheese
• Yolk of 1 egg, salt, Cayenne Pepper

Grate cheese, mix with flour, rub in butter and season well with salt. Form into stiff paste with yolk of egg and water. Roll out thinly and cut into strips about 4 ins. long and ¼in.wide. Bake in moderate oven til crisp. 20 mins or so.
