Tomato Sauce

  • 3 lbs. tomatoes
  • 4 large onions
  • 4 large cooking apples
  • ½ oz. pickling spice
  • small piece of root ginger
  • ½ pint white vinegar
  • 2 tablespoons Tarragon vinegar
  • ½ lb. sugar
  • 2 teasponns salt.

Skin and cut up onions. Cut up apples but do not peel and core. Cut tomatoes into pulp.. Let apples, onions, tomatoes, and pickling spice cokk till soft. Rub thro' fine sieve. Return to pan, add vinegar and sugar and boil rapidly stirring all the time until required consistency. Bottle, but leave till cold before putting on stoppers. Add demerara sugar and salt to taste.
