Marmalade.

  • 1 lb. oranges, (about 5)
  • 3 lemons
  • for 8 lbs. sugar.
  • 20 tea-cupfuls water

Grate oranges and lemons right through and put into pan with water. When it comes to boil, add sugar. The stones will then rise to the top and can be easily picked out. Boil about 1½ hors or till it jellies.


For Ginger Marmalade add 2lbs. Preserved Ginger chopped fine. Best with sweet oranges.
