Pastry

  • ½lb.flour,
  • 6 ozs margarine,
  • 1 teaspoon baking powder,
  • ½ teaspoon cream of tartar,
  • white of egg,
  • cold water,
  • lemon juice
  • pinch of salt.

Whisk white of egg to stiff froth with pinch of salt. Add sifted flour, lemon juice and cold water, roll out. Place third of butter, sprinkle with flour, fold and roll out. Do this three times then roll to size required. Under fruit brush pastry with white of egg. When nearly ready brush with egg to glaze.
