Wartime Cake

  • ½ lb. S.R. flour
  • 3 ozs. lard or margarine (or half and half)
  • 4 ozs fruit
  • 2 ozs. sugar
  • 2 tablespoons syrup
  • 1 teaspoon mixed spice
  • 1 teacup water or cold tea
  • 1 tea spoon soda

Put fruit, sugar, syrup and fat into pan. Pour over water or tea and bring to boil. leave till cold.

Put spice into flour. Mix with the boiled fruit. Dissolve soda in little milk and mix in quickly. Pour into greased cake tin and cook in moderate oven for 1 hour or a little longer. Make the mixture rather moist, not stiff.
