Parkins.

  • 2 ozs. flour
  • 2 ozs oatmeal
  • 1 oz. sugar
  • ¼ teaspoonful baking soda
  • ½ teaspoonful cinnamon
  • ½ teaspoonful ground ginger
  • 1 oz. sugar
  • 1 oz. margarine
  • 1 oz. syrup or treacle
  • few blanched almonds

  1. Mix dry ingredients, and add melted margarine and syrup.
  2. Mix well with hand and place in small balls in greased tray.
  3. Put half almond on top of each
  4. Bake in moderate oven 15 - 20 minutes.
  5. Cool on wire tray. If flat biscuits are wanted press balls with knuckles. Do not use rolling pin.
