Plum Cake

  • ½ lb. butter
  • ½ lb. brown sugar
  • 2 teaspoons rum (whisky or brandy)
  • 2 teaspooons mixed spice
  • 1 tablespoon treacle
  • 8 eggs
  • 10 ozs plain flour
  • 4 ozs S.R. flour
  • ½ lb. sultanas
  • 1 lb. currants
  • ¼ lb. minced peel
  • 2 ozs. ground almonds
  • 2 ozs. cherries

Method:-

Mix sugar and butter to cream. Add eggs one by one and mix well. Then sift in flour, spices, etc. Add fruit last and bake in a moderate oven from 1½ to 2 hours.


Regulo No 4 all the time till cooked.
