Marmalade 1939

  • 4lbs. marmalade oranges
  • 4 lemons
  • 28 breakfast cupfuls water (about 7 pints.)
  • 8 - 10lbs. pres. sugar

Wash oranges and lemons and cut in eighths. Put thro' mincer. Remove pips and tie in muslin. Boil for one hour. Add sugar 1lb for pint. Boil till it sets.


Marmalade Feby. 1941

1lb. marmalade oranges
Remove pips and cover with ½pint water. Take out pulp and cut it up. Cut skins by hand using every part of orange. steep for two days in 6 pints water. Boil for ¾ hour with strained water from stones. Add 5lbs. sugar and ½pint home made lemonade and boil til it sets, about ¾hour longer. Impossible to get lemons.
N.B. This is the best marmalade.
